I have an item which had a re-stocking date of next week, now the item is going to turn up later than this - I have spoken to all customers already ordered and they are happy to wait - however can I change the pending shipment dates to be later?

You can’t so depending on your metrics, you risk account deactivation due to late shipment.
The only way to overcome this is to ask the buyers to cancel the orders and to reorder when the goods are back in stock. Some will not cancel and you may have to cancel them yourself and take the hit.
It’s generally bad practice to list items which you are not able to ship within your handling time. I’m not sure about restock dates and how that works.

previously the advice was to mark as despatched and trust the buyers to be sympathetic- however since VTR came in this can’t be done.

Sellers cannot directly modify shipping dates for pending orders. This is a fixed part of Amazon's system to maintain reliability and consistency in their fulfillment promises to customers.
